Description

Community Nutrition is a core textbook for community nutrition and nutritional epidemiology courses at both the undergraduate and graduate levels in schools of nutrition and public health. Students must understand the basic relationship of nutrition to the disease process, including the role of nutrition in promoting health and preventing disease, in order to work effectively with heterogeneous communities. This book presents community nutrition as a collaboration between the nutritional needs of a society and the practice of a professional, providing a conceptual framework for understanding the course of health and disease and matching community nutrition or applied nutrition epidemiology to the model. It covers nutrition in US communities, including an introduction to epidemiology; primary prevention of diseases; and managing disease and avoiding complications. Throughout, the text stresses how the health of a community and its members relates to nutrition and eating behavior; how a scientific base and research interest strengthens community nutrition; and how professional can tackle specific needs of groups based on age or disease and can direct programs and interventions at different prevention levels. This new edition is thoroughly revised to include the newest Food Guide Pyramids, RDA recommendations, and other new data, guidelines, and recommendations; more emphasis on evaluation; enhanced material on functional foods, nutraceuticals, and phytoestrogens; expanded information on various cultures; and much more. Each chapter includes helpful pedagogy and tips: learning objectives; key words and definitions; an "info line" box listing key agencies, organizations, and Web sites; andHealthy People in Healthy Communities 2010 Objectives. A new feature, Community Scenarios, provides students with discussion, problem-solving, and decision-making activities based on real world situations. An instructor's manual is available for adopting professors.
